Both approaches produce good results, and experimenting with slower, cooler fermentation is worth trying once you are comfortable with the basics.

When the dough has risen, turn it out onto a lightly floured surface and divide it into portions depending on how many pizzas you are making. Shape each portion into a smooth ball by folding the edges underneath and rotating it gently against the work surface. Let the balls rest for fifteen to twenty minutes before stretching them out. This resting period relaxes the gluten and makes the dough much easier to shape without it springing back stubbornly.

Stretching by hand rather than rolling preserves the air pockets that developed during fermentation and produces a lighter, more open crust after baking. Press from the centre outward using your fingertips, rotating the dough as you go, and let gravity do some of the work by holding the edges and allowing the centre to hang and stretch downward.
